Mom's Vegetable Soup

Description:

I love the versatility of this flavorful vegetable soup!


Ingredients:

1 head green cabbage, roughly chopped
2 (8 oz) cans mushrooms, with liquid
2 (14 oz) cans whole kernel corn, with liquid
4-5 large carrots, roughly chopped
4-5 (28 oz) cans diced tomatoes
4 large stalks celery, roughly chopped
1 C broccoli, roughly chopped
1 large zucchini, roughly chopped
1 C dry pasta or pearled barley

Instructions:

Mix all ingredients in large stock pot. Cover and bring to a boil. Reduce heat to a simmer and cook until vegetables are tender and pasta or barley are fully cooked.
